Even though the weather has finally turned warm and mostly sunny on the Coastal Bend of Texas, and we go biking every days along the beach road, Jimmy sometimes gets a little antsy.
In order to keep himself busy, he frequently meanders through the RV park looking for bicycles to tune-up. (His background includes owning a bike shop in Oregon and working for several others in Eastern Washington.)
When he’s not pumping up tires or adjusting derailleurs, he’s trying out different recipes for stove-top griddle bread. (Oh, did I forget to mention that he does all the cooking? My job is to eat, smile and give positive feedback.)
A couple of days ago he made a yeast-dough recipe and cooked it in the Dutch Oven. Delicious.
Today he promises an Irish soda griddle bread to go with a pork roast he is slow cooking in Herman T’s Original Mild BBQ Sauce.
Can’t wait for dinner. Yummm.
